The only thing I might hold back on, would be PICKLED cucumbers and just use plain ones instead. It depends how acidic (vinegary) it would taste, I suppose.

Well, needs to be picked ones, that is the whole point, everything else is very sweet so will not be good. You can not use plain ones. Where i came from we do it very similar and looks like this

I can understand that completely, yes. I like carrots (yes even cooked ones, as they usually would be of course) but I actually prefer them raw, in certain situations.
I am 100% with you, thatās why when we do it, we only put one carrot, lol. I hate them, but i love the pickless. We also add pees, potatoes, loads of mayo, black olives on top.

I reckon you could and just use lemon juice, instead of vinegar. This of course would go well with the chicken (assuming thatās another ingredient, which it appears to be).
I know it would give it a totally different flavour, having said that about the lemon juice butā¦
Maybe as an experiment, will worth a try, but, in honesty, i canāt see it being good
