Asparagus is neither hard nor toughā¦itās soft as butter, then diced ham, new potatoes and asparagus sauce made from roux, the asparagus water and an egg yolkā¦just delicious⦠![]()
Well it jolly well was when I had it, let me tell you!
:face_v___ting:
I realise itās how one goes about cooking it, which makes all the difference though, of course.
Cooking is actually not a great art. I simply boil the asparagus in lightly salted water for about 15-20 minutes. The longer it cooks, the softer it gets, but too soft isnāt good either.
It is actually important that it was peeled well, because the peel remains hard even when cooking and does not taste good. I always cook the peel separately and then use the water to make the sauce.
I cook them with salt and mace.. I use the skins and the ends for the soup, delicious ![]()
