A lot of people peel with a knife. Fact is, if you peel you lose all the goodness of the spud. It’s all in the skins. The white of the spud is just starch and carbohydrate. Wash 'em and chop 'em. that’s all you need do. Cut out the eyes obviously, but skins on spuds are good.
