Cam 3 is definitely on night vision (maybe it shouldn’t be and is just stuck like that) …was working perfectly in colour earlier on, according to the timeline. You can see when they are in nigh vision mode because they show a blue light (on the camera body), like some of the others are, currently.
Seems I was wrong, looks like he had quick nap to rest before a tiring night.

It’s infrared mode. Most cameras will switch to it in the dark. They turn on infrared LED’s and bathe the area with invisible IR light that can be detected by the camera CMOS chip. There’s only one “colour” however, which is why it looks grayscale since it’s neutral. Nightvision on the other hand is amplification where even minimal light bounces through a screen and is converted to electrons that then excite a phosphor plate and produce more photons than they had in the first place. Also why it’s green. They don’t use those in (civilian) cameras though, cost a lot.
